Vermicelli Noodle Bowl
With a sweet and savoury almond butter sauce
This recipe is so simple and comes together in under 15 minutes. It’s been my go to on the days where I don’t feel like making anything time consuming or complicated.
The Noodles take roughly 10 minutes so I always start boiling the water first as everything else comes together quickly! Each brand has slightly different instructions so be sure to follow them accordingly.
Chop up roughly 1/2 a cup of
Cabbage
Cucumber
Carrot
1 cup Lettuce
1/4 cup Cilantro
1/4 cup mint.
For the sauce combine:
2 heaping Tbsp almond butter
1-2 Tbsp maple syrup (depending on how sweet you prefer)
1-2 cloves grated garlic
1tsp grated ginger.
1 Tbsp coconut soy substitute.
1-2 Tbsp water. Depending on the consistency you want your sauce.
Squeeze of lime juice.
Add all cut veggies to a large bowl,
Then add the cooked noddles into your bowl
Followed by the roasted black sesame seeds,
Chopped cashews and green onion. (All optional but highly recommended 🤤)
Then drizzle the sauce and enjoy!
