Crunchy Quinoa Salad
Recipe:
3/4 cup chopped red cabbage,
1/2 cup shaved Brussels sprouts
1/2 grated / thinly sliced carrot
1/2 cup cubed cucumber
1/2 cup micro broccoli greens
Minced fresh basil
1 cup cooked quinoa
Top with green onion and chopped cashews!
for this salad everything is raw except the quinoa. So in a large bowl add cut vegetables along with quinoa and pork sauce right over top and mix!
For the sauce combine:
2 heaping Tbsp almond butter
1-2 Tbsp maple syrup (depending on how sweet you prefer)
1-2 cloves grated garlic
1tsp grated ginger.
1 Tbsp coconut soy substitute.
1-2 Tbsp water. Depending on the consistency you want your sauce.
Squeeze of lime juice.
