Roasted cauliflower on a bed of stewed lentils and creamy sweet potato
As someone who struggled with skin issues for years, sweet potato has become a staple in my life due to its richness in beta carotene which is great for the skin. Im always looking for creative new ways to enjoy it.
This recipe is really quite simple and very nourishing.
Let’s get into it.
Serves 4
Ingredients:
1 head cauliflower
4-5 medium sweet potatoes
2 tablespoons maple syrup
Milk of choice (I used almond)
2 tsp garlic powder
1 cup brown lentils
1 medium onion
4 cloves garlic
1tsp cumin
1 tsp dried rosemary
2 bay leaves
2 tbsp coconut soy
½ cup cilantro (optional)
Goji berries (optional)
Directions:
Pre heat oven to 400
Lentils
Dice up onion and lentils and add to a pot to soften with a small amount of water to keep from sticking. (I don’t use any oil in this recipe but if you prefer to sauté your veggies in oil instead of water that’s ok!)
Once onion softens add 1 cup rinsed dry lentils, followed by coconut soy, rosemary, cumin and the bay leaves as well as salt and pepper and garlic power and stir for a few minutes on low heat
Then pour in 3 cups water and bring to a boil- then reduce to simmer cover with lid and set aside to cook.
Sweet potatoes
Bring a large pot of water to boil and then add in your peeled sweet potatoes they will take about 15 minutes to soften depending on your cube sizes. So I would set these aside to boil and start the cauliflower, then return to finish the potatoes while the cauliflower is in the oven.
Once sweet potatoes are soft drain water and add a splash of milk along with maple syrup garlic powder and salt (both optional)
Then grab a whisk or soup wand and whisk until smooth.
Cauliflower
Wash cauliflower and cut into “steaks” about 1 inch thick. Then I quickly char both sides on a frying pan ( this step is completely optional and can be skipped but it is said it brings out the flavour) then place on a baking sheet and give a light salt and pepper and pop in the oven. You can add more spices here if you’d like. Cauliflower will roast for about 30 mins but this time will vary.
Lastly plate everything and top with cilantro and goji berries as well and salt and pepper to serve.
If you find cilantro over powering, for a pop of green, green onion might be a nice substitute and a nice flavour addition.
